No. 1 – Métis: cherry vinegar flavored with rose petals, dune pepper, and elderflower
No. 2 – Renart: wild cherry vinegar (made from Prunus Virginiana fruit, also known as chokecherries), typical of our Lower Appalachian region.
No. 4 – Courtepointe: this balsamic vinegar is made from late summer honey, when bees are foraging on goldenrod and asters. Mild in flavor, this vinegar easily replaces white balsamic and is very versatile in the kitchen.
No. 5 – Les Voiles: a maple balsamic vinegar aged for an extended period in bourbon barrels. Flavorful, complex, and well-balanced, it can be used in all sorts of dishes. On fresh oysters, it enhances the briny flavor and reduces the saltiness.
