n˚ 8 – Minashkuat – a balsamic vinegar inspired by forest

Maple & conifer artisan balsamic vinegar

“For more than 10 000 years, the First Nations lived on this continent with much simplicity but with an infinite richness provided by the forest. This ever-evolving cuvée is a way for me to explore with humility, observation, reflection and sensibility the nature that surrounds me, the forest I inhabit and which inhabits me. In innu language, minashkuat is a word meaning “in the forest”.”



Inspired by the woods and forests surrounding our property, this balsamic vinegar has a rich and complex flavour: smooth, fresh, earthy, resinous, intense and mysterious. Minashkuat is an ongoing experiment, and each lot is different, made up of many botanicals fermented in small batches or infused in a maple vinegar. It gives us the opportunity to learn more about native plants and their uses, to reconnect with some long-forgotten knowledge and slow down the pace of modern life.


Maple vinegar, organic maple syrup, conifer needles and cones (spruce, pine, thuya, fir, larch), alder pepper, juniper berries. Unfiltered, unpasteurized, contains no preservatives. Contains sediments. Crafted in Quebec, from locally-sourced ingredients
